the idea of adding custom headers/footers to the email sounds good to me... anyway, it is not so important to me, as normally, an admin or another responsible for the site gets the email (except if there is a "send copy" item on the form - but then it goes to the one who has submitted the form, and he/she should know what he/she has done - so it is just something for his/her records).
The feature will be applied sooner or later, but to increase it's priority, a sponsorship will be a good idea
